Whatever method you use to sterilize jars, you cannot avoid the stage of preparing jars for sterilization. What is it?

First of all, it is necessary to check the integrity of the cans, to reject cans with a chipped neck, cracks. These jars are not suitable for blanks, it is better to throw them away or use them only as containers for storing bulk products (tea, cereals, herbs).


Then you need to check if you have lids for these jars, and how tightly they seal the jars. If you are using iron screw caps or plastic caps, it is not necessary to change them every year, but be sure to check them for tightness. Take a jar, pour water into it, wipe the jar thoroughly from water, tighten the lid as tightly as possible, turn it over and shake the jar over a paper towel. If there are drops of water on the napkin, then such a cover will not suit you, it skips.

In addition, when using metal covers, pay attention to the absence of rust spots, scratches, concavities. Damaged covers are not suitable for harvesting for the winter.

When using lids with elastic bands, pay attention to the elasticity of the elastic band, old, long-stored elastic bands tend to dry out and crack. These lids don't work either.

After the revision of the jars and lids, it is necessary to thoroughly rinse them with a new sponge using baking soda. You can soak the jars in water with soda for several hours. It is soda that helps not only wash jars well, but also eliminate any odors. If you don't happen to have baking soda at home, you can wash the jars with laundry soap or unscented dishwashing detergent. In all cases, the jars must be rinsed well, I prefer to do this under running water.

Ways to sterilize jars


There are several ways to sterilize jars at home.

Conventionally, they can be divided into two groups:

  • classic;
  • modern.

Our grandmothers used classical methods of sterilization.

This is the processing of cans with steam, boiling cans, processing with potassium permanganate.

Sterilization of cans with potassium permanganate

Dilute a saturated solution of potassium permanganate, pour it into clean jars, filling them halfway, then add warm water to the top, close the lid and let stand for 10 minutes. Then turn the jar over and let stand for another 5 minutes. Drain the potassium permanganate, pour boiling water over the jar and you can use it.

This method is suitable for sterilizing any jars, but at present it is almost impossible to find potassium permanganate.

Steam sterilization of jars


You will need a pot of boiling water and special tools that you can buy at the hardware store.

For many years now, an aluminum circle with a hole inside has been regularly serving me. It can be installed both small banks and large ones. Now there are already devices for 3 cans, but you can use the usual grate from the oven or the oil splash screen, which is used during frying in a pan.

To sterilize several jars, it is better to choose a pan with a wide bottom. It is enough to pour water into the pan, bring it to a boil, put the grate on top and put the jars on the grate and steam them. At the same time, the lid can also be lowered into the pan for sterilization.

The steaming time is different for cans of different sizes.

How much to sterilize jars for a couple

for 0.5 and 0.75 liters for at least 10 minutes;

for 1 liter for at least 15 minutes;

for 2 liters for at least 20 minutes;

for 3 liters from 25 to 30 minutes.

Boiling jars in a saucepan

This method is suitable for sterilizing small jars. In this way, you can process several cans at once.

Take a large saucepan, put a wooden grate on the bottom (if there is no grate, you can put a towel folded several times) and put jars on it, fill it with cold water and heat it on the stove until the water boils. After boiling, “cook” the jars for at least 5 minutes. Lids can also be sterilized immediately.

This method is good in that jars can be prepared quickly, and the downside is that such sterilization is not ideal and is only suitable for those recipes that provide for further sterilization of homemade workpieces.

The methods described above have one significant drawback for me - a lot of steam and heat in the kitchen, in addition, it is easy to scald with boiling water, therefore Lately I prefer modern "dry" ways to sterilize jars.

Sterilization of jars in the microwave


Pour water into clean jars, filling the jar by one third. Turn on the microwave for 5 minutes at a power of 800 watts. The water will boil, the sterilization will steam, but there will be no steam room in the kitchen.

Small jars can be sterilized:

How to steam sterilize jars

One of the most common sterilization methods. The bottom line is simple - you need to heat the water to a boil, and place the jar in such a way that the released steam gets inside. Several tricks can be used:

Simple: A sieve, a special wooden grate, or a few simple planks are placed on the pan to avoid the jar from touching the surface of the water. Pour in liquid and bring to a boil. A pre-cleaned jar is placed on top, neck down. Depending on the volume, sterilization is carried out from 15 to 25 minutes.

We hold jars with a volume of 0.5 to 1 liter over steam for 15 minutes

We hold jars with a volume of 1 to 2 liters over steam for 20 minutes

We hold jars with a volume of 2 to 3 liters over steam for 25 minutes

With special cover: Very comfortable, inexpensive, but efficient device- a special lid with holes for jars. The process is similar to the previous one, but this device allows you to concentrate the steam in the right place and simultaneously sterilize several cans, which will significantly reduce the time.

In a steamer: Modern technologies allow the processing of cans in this way. The method is similar to the previous ones, only water is poured into a double boiler, the jar is installed upside down, the “cooking” mode is turned on and sterilization is carried out for 15 minutes. Minus - the device must have sufficient capacity.

When using any method of sterilization, care must be taken - the processed jars are very hot. Therefore, use towels, potholders, etc. to move them.

How to sterilize jars in the microwave

This simple method is gaining more and more popularity. Its main advantage is speed. About 2-3 cm of water is poured into the jar, and the vessel is placed in a microwave oven. Large ones can be placed lying down, but you need to carefully monitor the water level so that it does not flow out. The oven is turned on for 3 minutes at a power of about 700 watts. Water boils, steam is formed, the jar is sterilized from the inside.

Please note that water must be present in the jar during the entire process. Otherwise, the microwave oven may be damaged.

How to sterilize jars in the dishwasher

The method is convenient in that it is carried out without any control by the hostess. Already washed cans are placed in the machine, the mode is turned on, providing for the maximum temperature and sterilization is carried out. Detergents in this case are not added!

The method has another big plus - unlike other appliances, the dishwasher does not increase the temperature in the kitchen, which can be very important in hot summers. However, there is a minus - the maximum temperature for conventional cars does not exceed 70 degrees. In most cases this is sufficient, but there is still a small risk of microbial entry.

How to sterilize jars with blanks

This is very important aspect. The fact is that no matter how well the sterilization was carried out empty cans, microbes can be brought in with the contents. This is especially true for canning without the use of vinegar. This sterilization can be carried out in different ways:

Boiling

A jar of contents is placed in a saucepan, at the bottom of which there are daughters or a thick cloth (to prevent touching glass and metal). Hot water is poured, the level of which should not reach the throat by 2-3 cm. The jars themselves are covered with a lid: they do not close tightly, but they cover it, leaving the possibility of air exchange.

The stove is turned on, the pan is covered. The maximum temperature is maintained, however, if drilling is too active, it can be slightly reduced. Processing time depends on the recipe and the volume of jars. As a rule, it is 10 - 30 minutes.

Oven

The jar with the contents is covered with a lid and placed in the oven. Processing takes 10 - 25 minutes at a temperature of 100-120 degrees. Despite the simplicity of the method, there are two essential points:

  • You can only place the jar in a cold or slightly preheated oven, otherwise it may burst.
  • If lids with rubber seals are used, they (gaskets) must be removed for the period of sterilization of the jar.

Microwave

Open (!) jars with contents are placed in the oven. Set the maximum power and bring to a boil. After that, the power is reduced to a minimum and future canned food is kept in the microwave for another 3 minutes.

How to sterilize lids

So, the jars and contents are sterile, but the lids remain. As a rule, we are talking about metal products, which means that the microwave oven is completely excluded. It is not recommended to use a dishwasher. The oven will work, but if there are rubber seals, they will have to be removed and sterilized separately.

Boiling or steaming would be ideal methods. If the same method is chosen for the sterilization of jars, it is possible to combine the processes. It is only required to take into account that the processing of the covers takes 10-15 minutes and is carried out directly before closing.

Proper sterilization is the key to successful canning! The process is simple and will not take much time. At the same time, it will help to avoid a huge number of troubles, preserve the harvest, and provide the whole family with delicious canned food for the winter.

Sterilization in boiling water

This is one of the common ways to sterilize glassware at home. It is necessary to take a wide pan, fill it with water less than half the volume, and immerse the jars filled with water there.

After that, bring the water to a boil on the stove. Usually sterilized in a container with a volume of up to one liter. The operation time is 10-15 minutes from the moment the water boils.

In the oven

The next method, which is widely used by experienced housewives, is the sterilization of glassware in the oven. The difference of this method is that the use of water and steam is excluded. This is dry sterilization.

It is necessary to put the jars in a cold or slightly heated oven. If the containers are dry, they are placed upside down. Banks with residual water should be placed upside down to evaporate it. You can install several cans of different sizes at once. Place the containers on a wire rack or on a baking sheet. The oven must be heated to 150 degrees. Sterilization time, depending on the volume of the container, is 10-30 minutes.

Ferry

A proven method for preparing containers for decades is sterilizing them over water vapor. Our grandmothers also used this method. You need to take a pot or kettle.

You will also need a special stand, which can be purchased at a hardware store. The stand has a recess for one or more jars, depending on the width of the pot. In the absence of a stand, you can also use a simple double boiler or a grid that protects against oil splashing when frying.

If you are using a conventional (non-electric) kettle, the stand is not required. It is necessary to pour water into the kettle and place the jar upside down instead of the lid.

The processing time of the dishes from the moment the water boils depends on the volume of the container and ranges from ten minutes to half an hour.

In the microwave

The most modern tool for preparing cans for canning is a microwave oven. This method has many advantages. The most important of them is high speed. At the same time, there is no steam in the room in which the treatment is carried out.

To process dishes in the microwave, it is imperative to pour a little clean water into it (up to two centimeters from the bottom). Empty containers should not be placed in the microwave oven. Sterilization is carried out at maximum power for 1-8 minutes. During this time, the water will boil, and the germs on the surface of the dishes will be destroyed by steam.

The amount of dishes placed depends on the volume of the microwave oven. Two-, three-liter jars, if they do not fit, can be put on their side. At the same time, it is necessary to pour enough water into the jar so that it does not spill out.

Important! The magazine "Miss Purity" recalls that it is absolutely impossible to sterilize iron lids in this way.

In the dishwasher

This is the simplest and most effective method, but not all homes have such a device.

Banks are placed on two sliding shelves of the dishwasher. Then the machine must be set to the mode with heating to the highest temperature and turned on.

Advice! Dishwashers are much more capacious than microwaves and ovens. However, in them it is often impossible to set water heating above 80 degrees, or even less. Therefore, there are some doubts about the quality of sterilization by this method.

You can prepare food for preservation as long as Dishwasher sterilizes glass containers. The longer this process takes, the better.

cold way

A known method of processing containers for canning alcohol. Is it possible to find other similar means of cold sterilization at home? It is recommended to use vinegar.

It is necessary to take a half-liter jar, pour cold boiled water into it up to the shoulders. Then add 7 tablespoons of 70% vinegar. Get a sterilizing solution.

The container, as usual, must be thoroughly rinsed, then pour the resulting solution into it, close the lid and shake well for twenty seconds. After that, the solution must be poured into the next jar and the process repeated.

After sterilization of the container, it is necessary to hold it upside down for some time so that the liquid glass from the walls. The prepared solution is enough to process fifty cans.

This requires a wide pan, on the bottom of which a clean towel or any cloth is spread. Then you need to arrange the jars filled with products and covered with lids so that they do not touch each other. After that, carefully pour cool or slightly warm water into the pan, so that the water does not reach the lids by about two centimeters. Then bring it to a boil.

Advice! When pasteurizing, do not put jars on the bottom of a pot of boiling water. Due to the temperature difference, the glass may crack.

Processing time depends on the volume of cans and is approximately 10-15 minutes. Can be sterilized longer.

Then the containers with the contents must be carefully removed from the water using a special tool that is commercially available and rolled up with a machine.

When the jars are sterilized, filled and rolled up, they must be turned over and placed on the lids. Hot canned food is recommended to be placed on a wooden surface. To slow down the cooling process, the jars should be wrapped in a warm blanket or outerwear. When the blanks have cooled, you can remove them to a permanent storage place.

In order for the work to be carried out not in vain and the prepared products do not deteriorate, it is necessary to carefully process the lids.

They also need to be washed first with a sponge and soap, baking soda, or dish shampoo. After that, the lids are placed in a container of boiling water and kept for two minutes.

Lids that are used to seal canned food must be in perfect condition. On their surface there should be no traces of rust, scuffs and dents. Rubber bands must be selected according to the diameter of the lid.

These are the most famous simple ways sterilization. Apply them on the farm. Choose the method that is most convenient for you.

Sterilization in the oven and microwave

The method of sterilizing cans in the oven is good because several cans can be processed at once, spending not so much money on the sterilization process.
First of all, the jars must be washed well, and then placed in a cold or preheated oven, on a wire rack. If the jars are dry, put them upside down, wet ones upside down so that the water has time to evaporate. At 150°C, 15 minutes will suffice.

For filled jars, the oven sterilization method is also suitable. Heat the oven to 100°C, put the filled jars on the wire rack, but do not cover with lids. Note the time - for cans with a volume of 0.5 liters, it will take 10 minutes, and for liter ones - 15 minutes. Remove jars from oven and seal immediately. Turn rolled jars upside down to cool completely.

The method of sterilizing jars in a microwave oven requires even less time. However, there are subtleties here. Do not put empty cans or metal objects in the microwave. Therefore, only jars, without lids, can be sterilized in the microwave. And so that the jars do not burst, place a glass of water on a rotating stand. Or, alternatively, pour some water (about 50-70 ml) into the jars themselves. In this case, sterilization will take 2-3 minutes at full power.

Sterilization in boiling water

You will need several important items. First, one large, heavy pan, 15-20 liters. The main thing is that it should be wide, and fit 3-4, and preferably 5 cans. By the way, both jars and lids can be sterilized at the same time, on two burners. A small saucepan or heavy saucepan will do to sterilize the lids. And it is most convenient to get them with tongs with wide blades.

Prepare a few clean waffle towels, paper napkins and a rolling machine ahead of time. Set aside the required number of tin lids with rubber rings. Take with a margin so that if necessary, extra covers are at hand.

To begin with, you need to wash the jars well: soak them in warm water with the addition of soda, preferably for a couple of hours. Then wash with a brush and detergent, rinse with cold water and dry. Then place the empty jars upside down in a saucepan filled with about a third of warm water. If there are several jars, a wire rack should be placed at the bottom of the pan so that the jars do not break against each other. Bring the water to a boil and sterilize the jars for 5 minutes. Take out, wrapped in a folded towel, and place on paper towels to dry.

Prepare lids. Wash tin lids and rubber rings in warm water and detergent. Rinse and pat dry, then insert rings into each lid. Walk along the edge to press firmly.
